Dear Tamim Yousefzai,
The original books and poems of Balkhi-Rumi are in Farsi Language, i believe most of them are translated in English, presentations in any of the two languages, (English and Farsi) are preferred, but is not obligation.
Since in this project people from all background and nations will be involved i would not limit the language, you can develop your works in any formal language of any country and at the end we will decode them with tittles in English.
